Chef Donald Coffman’s short plate at The Gallery event in Little Italy this week featured Forbidden Cambodian Rice, Gochujang Shrimp, Yuzu Honey Mustard Frill.
Forbidden rice (or black rice) is an ancient grain that has fewer carbs & calories with more protein that either white or brown rice. Cambodian rice continues to win awards as the world’s best rice (especially the PHKA RUMDUOL Rice Variety). Most of the rice-growing land in Cambodia is cultivated by farmers using traditional practices which include being rain-fed and planting crops only once a year.
