It’s that time of year that leaves are falling, kids going back to school and the NFL football season begins. Many gather around taking polls, barbequing, and hosting football parties. Here is a great recipe for any social affair.
Pulled Pork Potato Skin
Servings size = 3
- 3 Russet Potatoes
- ¾ Swiss Cheese
- ½ Bourbon Barbeque sauce, warm
- ½ pound Braised Pork
- Crispy Onions for toppings
- Chopped Scallions for garnish
Preheat oven to 350 degrees F.
Bake potatoes on middle rack until fork tender for about 1 hour. Remove from oven and let sit until cool.
Preheat grill to medium heat.
Cut potatoes in half, lengthwise, and spoon out the flesh, leaving a shell.
Place potatoes on grill and cook until crisp, about 4 minutes on each side and remove from grill.
Stuff potato shells with the warm braised pork, bourbon barbeque, and Swiss cheese. Finish top of potato skins with crispy onions and scallions for garnish.
