Purslane; Weed it or Eat it?

Is it a weed or a wonderful taste treat? Purslane is both cursed and craved at the same time. For most of us, it comes as an unwelcome guest in our gardens, but for Chef Donald Coffman purslane a beautiful and delicious ingredient for his menus. The taste is similar to watercress or spinach. Use purslane in salads or on sandwiches instead of lettuce or pickles.

Chef Donald Coffman features purslane here with San Daniele Prosciutto and heirloom melon.
