Culinary's "Concepts"

While researching organically and locally grown produce I came across all these farms-- Beck Grove Farms, Tierra Miguel Farms, Connelly Gardens just to name a few...all right here in our backyard.  I guess it does make sence that with all the sunshine that we get this would be a great place for farms.  Listen to what Tim Connelly of Connelly Farms has to say about his upcoming summer heirloom tomato harvest:  "Tasty, Colorful and Exotic describe the mixed heirloom tomatoes from Connelly Farms.  A variety of deep red and black types like Carbon and Cherokee Purple are complemented by bright Banana Legs and Striped German, just to name a few of the many great tomatoes in this assortment."

So the team is slowly dribbling back into the office after attending the CaterSource convention in Las Vegas.   I can tell by the bags under people's eyes that going to the convention wasn't the only thing that went on!!!  The overall concensus was that there was lots to learn, but portions of the convention are really geared towards newcomers to the industry (the old pros like us already got the hang of it).  Did anyone else out there have an opportunity to attend?  What are your thoughts?
